30 Minute Veggie Tortellini Soup – Kid-friendly Directions

1 cup Food With Purpose Tortellini

2 tbsp Olive oil

1 Rib celery, chopped

½ Sweet onion, sliced

1 Clove garlic, finely chopped

½ cup Coin cut carrots

1 (14.5 oz.) Can low sodium diced tomatoes

½ cup Green beans

¼ cup Frozen sweet corn

¼ cup Grated Parmesan cheese

Salt and Pepper to taste

1 Prep Ingredients (Joint step).

2 Heat oil in large pot over medium heat (Adult only step).

3 Add garlic, celery, onion, carrots and cook 5-10 minutes, until tender (Joint step).

4 Increase heat to high; add broth, tomatoes, green beans and corn. Bring to a simmer and add tortellini. Reduce heat and simmer 14 minutes, or until tortellini is cooked (Adult only step).

5 Top with 1 tbsp. of cheese (Kid friendly step).
