Risotto with Cauliflower

An authentic style recipe that compliments grilled meat and chicken dishes.

INGREDIENTS

1 cup Food With Purpose Rice & Ancestral Grains, cooked al dente


2 cups vegetable or chicken broth


¼ clove of garlic


4 tbsp chopped onions


¼ tsp turmeric powder


4 sprigs of parsley


2 ½ tbsp tablespoons of butter


1 cup cauliflower


1 cup chopped red peppers


½ cup grated parmesan cheese


salt and pepper to taste


olive oil

STEPS

  1. Start cooking Medley of Ancestral Grains, following the cooking instructions on the package.
  2. While simmering add turmeric, peppers and cauliflower.
  3. Before liquid is fully absorbed, add a second tbsp of butter and cheese stirring to melt and blend well. Adjust for salt and pepper and finish cooking until desired consistency.
  4. Serve, garnish with fresh parsley and enjoy!
